My Mood: | | | 3 Minute Meals When life gets so crazy that even a Rachael Ray recipe seems overwhelming, what do you put on your plate?
Do you have a favorite meal or receipe that is lightning fast and delicious?
My go to quick meal is fresh mozzarella over sliced tomato, drizzled with a little olive oil and sprinkled with fresh basil (in a pinch, dried will work) and eaten with a knife and fork or on Triscuits, especially the rosemary and olive oil or quattro formagio variety.
Anyone else?

My Mood: | | | Re: 3 Minute Meals I boil myself some ramen, throw away the stupid zillion mg of sodium flavor packet, strain it when it's done, add a little butter, and then slowly add grated pecorino romano cheese and coarsely ground black pepper to taste. Save some of the water you boiled the ramen in to add to it a spoonful at a time to stop the cheese from clumping.
And if you have some on hand, a little bit of fresh chopped arugula is heavenly on it.
